How We Process & Freeze Corn

1.) Shuck the corn and remove as much of the silks as possible.
2.)  Use a small brush to remove all the remaining silks.
3.) Gently wash corn under cool running water.  Dry completely.

If freezing on the cob, place in freezer bags or vacuum seal bags and seal tightly before placing in the freezer. 

If cutting kernels off the cob, use a small sharp knife to remove the kernels from the cobs, scrape the cobs to get the corn juice out, add to freezer bags, lay flat and stack bags, place in freezer.


How We Make Fried Corn

1/2 stick butter
3-4 cups corn
1/4 cup water
Couple large pinches of salt
2 Tablespoons sugar, optional

Using a large skillet, melt butter before adding corn, water, and salt. Cook over medium to medium high heat until most of the liquid has evaporated. Sprinkle in sugar, if using. Stir to dissolve sugar. Serve while warm.

  • Processing and freezing corn. Music to my country ears. Love off the cobb, creamed corn, fried corn. So, oh, So delicious. Shuckin’ corn sittin’ on the porch. Always went with mama, Granny, Papa to the open fields. Yes, cropped, back home with, yes, 25-30 dozen ears of corn. Process, eat some and freeze. Always had the cream of the crop, all food. I never thought we were poor, I thought we were rich and we were, God gave us all we ever needed. Good memories, love in hard work. Didn’t have a sealer those days. A meal of corn on the cobb, watermelon dessert. That’s right, final scrape. We froze it. Can’t borrow trouble about freezing corn. Can tomatoes, beans and peas, okry, green beans. Born and raised Florida, all my life. Mustard, collards, turnip roots - froze. Delicious, I can taste it. Buttery yes. Just right-no sugar, pure corn taste. Yummmmnn Fresh Corn. Praise God Shuck it, silk it. Roast on a grill in the shuck. Thank you♥️✝️♥️ Loving memories.

    When I was able to eat corn, I loved sautéing onions green red and yellow bell peppers until softened then adding the fresh or canned drained corn. Pepper salt and a little sugar. Delicious. No meat was needed when you could have fresh veg from the garden. ❤️❤️❤️❤️

    To help and save time shucking corn cut the end of the corn that attaches to the stalk off. Then grab the top with the silks and pull the silks and husk off together. This will result in a near clean if not clean ear of corn. Hope this helps.

  • My sister and I have been busy for 2 days doing corn! We have picked, shucked, washed , removed silks, blanched, cut & bagged corn off of nearly 400 ears! The corn we have is Peaches & Cream and Honey Select variety. So delicious!!

    ❤❤❤❤❤Thank you Melissa, I was going to ask about the holder of the bag. You read my mind. My daughter had a musician from Germany come to the Carolina Mountains. After his concert we where able to meet and of course my daughter volunteer me to make breakfast the following day. I asked him "what would you like to have for breakfast.?" He said "German Pancackes" 😮 I said ok. I was born in Mexico "Guadalajara" and from eggs, tortillas and beans, I didn't know what was "German Pancakes". I didn't wanted to make a full of myself so I said "OK you got it" I know what you are going to say but he mentioned not to forget the CORN. I said no worries. So, I made the regular pancake mix BUT I added fresh corn. I blended all and cooked them like regular pancakes and he was so happy. He said the last time he had them were made by his mom. Rest in peace 10 years ago. He gave me a big hug. I was happy for him. He only put on top fresh blueberries, strawberries and powder sugar. Tom and Melissa, try them ok. Delicious❤❤❤❤

    Tom, I cook two ears of corn in the microwave for six minutes and they were perfect. No boiling water in a pan, etc. Thank you for posting this video. Loved the comments from people too! So many memories!❤
  • Loved this Video. Thank you for doing it. My dad was Military and my moms side of the family were cotton farmers in tx. The Panhandle. Anyway, as a kid, i would beg my mom and dad to let me spend the summers with moms family. Such a different way of lfe from ours and i loved it. So my aunts did all the cooking for the ranchers and hands. I mean huge meals for lunch. Always roast and all the fixings. They taught me so many things that i do in my daily life now. Putting up corn like you do, green beans. We would sit for hours❤ how i miss them All❤ please do a video on how you put up your green beans ❤ Thank you for the best memories in my Life❤

    Hey guys it's Jeff from . Maine I love this video I also freeze my corn on cob I'm a big corn on cob eater. Tom on back porch and you got beautiful big porch and yard. I just cleaned and froze Alot myself last week I love bi-color corn so sweet and I love it. Thanks for video as your in my heart and prayers

    I used to help my mother process vegetables. She canned tomatoes, tomato juice, green beans, field peas, and jars of what she called vegetable soup mix that had tomatoes, kernel corn, field peas, and okra. She froze squash, okra, and more. Nothing beats fresh veggies, and using the canned and frozen veggies,was so delicious during the fall and winter. Your video sure did bring back lots of good memories. Love your channel.

    I agree with your daughter! If you have corn, mashed potatoes is a must! I think frozen corn tastes more like fresh corn!

    When we lived in Kentucky we went to U Pick farms for our green beans, beets, and corn, and so on. "Work em up". Haven't heard that since we moved to Washington State!

    You’re bringing back memories! For 25 years, the first week of July ( many years it was on the 4th) you would find me at my in laws working up corn. We usually processed 400 ears cream style, that made for a long day, but good memories! There’s nothing better than fresh cream corn poured over a large fresh slice of tomato . Yummy

    Been doing my fresh corn I the microwave for years. I take it out and roll it in butter and sprinkle a little salt on it. Like you I could eat it every day. Enjoy all of your recipes and have tried several. Your chili recipe is now the only one I use. Greetings from down South in North Mississippi.

  • One of our favourite things to do with corn is Cajun rice. Fry diced onion, celery, garlic and green bell pepper in plenty of butter till soft, add cold cooked rice, and canned or frozen corn, and a diced tomato. Sprinkle over cajun seasoning, or make your own seasoning mix by adding half a teaspoon each of sweet paprika, cayenne, garlic powder, onion powder, dried thyme and black pepper. Fry for a further ten mins, adding a little water if it starts to dry out. Wonderful with fried chicken or fried fish
  • Hi Tim and Melissa for bringing back childhood memories!! Several families used to get together when I was young and they processed corn .. I remember as kids as they cut it off the cob we would ask for a strip that was cut and we would see who’s strip held together and we would eat it that way !! And fried corn is absolutely delicious !!! Thank You both for sharing the whole process!
