    This video is rich with culinary techniques. The explanations on how to master knife skills, seasoning, cooking assorted proteins, and plating were really enlightening. And special thanks for the emphasis on mise en place it's an underrated yet vital aspect of cooking.

    Nick , I give you my condolences due to Linda’s passing. you deserve all the support due to how you and Linda were not only friends but kitchen buddies and a super team! Nick I hope Linda’s family have all the love and support drying these rough times. I just wanted to say this because when I was growing up I use to watch you two all the time making records and cooking in the kitchen making me feel good and wanting to try the food that you guys made! I hope the best! Rip Linda 2024 we loved you!❤❤

    Nick, you’ve been an inspiration to me. Last year I started watching your content and bought your cookbook as well. I also come from an Italian American family, but cooking was never a strength of ours. I was a complete beginner when I started watching your videos and now it’s become a passion of mine. I’ve watched your “Learn to cook in one hour” video at least 10 times. Thank you my dude for being such a good teacher!

    Been working in a kitchen for about 3/4 years now, got to a point where it began to get stale as I couldn’t really figure out how to move forward given that I work off a set menu and don’t really have the time to when I get home given the hours I work, your videos have been a godsend and this one specifically with how to develop more skills and how to better them hopefully making cooking fun again rather than just boring work! I genuinely want to make time to cook and eat a bit healthier now. Next step is buying a house so I don’t have to worry about waking anyone 😂😂👌🏽 Also. RIP glass pot. 💕

    Nick doesn't hide any secrets, he always tries to make the kitchen easier for us.

    Another safety note about the knife - if you have to carry it by hand from one station to another, always carry it underhand, with the spine of the blade against your forearm. Also, this is how you should hand the knife to another person if setting it down for them to pick up isn't an option. This keeps the sharp and pointy bits safely tucked away from anything you don't want to cut. I know it's extreme basics, but when it comes to safety you can't go over the basics too much.

    Hi Nick, my mom makes a dish that is kinda like fried rice, but instead of frying it, she steams it, and she puts it in this order in the pot : cooked rice ( preferably rice from the day before that was stored in the fridge) on the bottom, sausages, peas and corn, and then cover the whole pot with a lid. After steaming, the rice on the bottom would get the same crispy texture and the rice on top would be soft. So when you did the butter and rice thing, it reminded me of what my mom makes. You make great videos and I hope you have a prosperous new year!

    I started learning how to cook these past few months and I've made so many different but simple meals since then. YOU are the reason I really started to get into cooking and might pursue it as a career.
