The only flaw in your plan is that you're not accounting for the fact that people aren't going to just accept you taking the bodies of their loved ones and harvesting them for organs. Someone is absolutely going to identify the vehicle that comes out every year and collects bodies to take to a human chop shop, they're going to find out who you are and they know exactly what vehicle you'll be driving and what routes you like to take. You'll be making just as many enemies as the thieves will because you're also stealing something form those people, their friends and family members.
