I've sharpened my victorinox fibrox 28cm chefs knife (about AUD$50 circa 2001) I think somewhat sharper than the $3000 one more than once and the stainless steel in that thing is super high quality but very soft in comparison, so no it doesn't hold it's edge nearly as long. Hands down the 2 best value knifes in this vid are the 1c one & the $50 one. In a review like this there should've been at least another 2 knives between the $50 & the $3000. Something from the Yaxell stable would've been appropriate. The Ran & Mon Models (amongst others) all are multi layered damascus steel & the full tang handles are wrapped with resin soaked linen that after shaping is reminicent of wood grain but it's not trying to fool the owner as you can always see the linen weave. The Ran 21cm chefs knife is 69 layers Damascus steel & great value at around AUD$180 about 8 years ago. I wouldn't exactly say you had to put "...zero effort..." into this review but it kinda feels like you had one, two or three of them sent to you to review & the other 2-4 of them were what you found in your kitchen drawers.
