Blackberry Buckle

INGREDIENTS
For the batter:
1 stick unsalted butter, softened, plus more for pan
2 cups all-purpose flour, plus more for pan
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon freshly grated
nutmeg
¾ cup sugar
1 large egg
½ cup buttermilk
2 cups blackberries

For the topping:
½ cup sugar
½ cup all-purpose flour
½ teaspoon ground cinnamon
14 teaspoon salt
4 tablespoons unsalted butter, melted

1. Position a rack in the middle of the oven and preheat to 350°F.Brush a 9-inch cake pan with softened butter and dust with flour, shaking out excess.
2. Make the batter: In a medium bowl, whisk to combine the flour, baking powder, baking soda, salt, and nutmeg. In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy, 3-5 minutes. Add the egg and mix well. Add the flour mixture in three additions, alternating with the buttermilk in two additions, beginning and ending with the flour. (In other words, add in a third of the flour, half the buttermilk, another third of the flour, the other half of the buttermilk, then the last third of the flour.) Stir well to combine.
3. With a flexible spatula, gently fold in the blackberries. Transfer the batter into the cake pan, and smooth the top with the spatula.
4. Make the topping: In a small bowl, whisk together the sugar, flour, cinnamon, and salt. With a fork, stir in the melted butter to form small clumps.
5. Sprinkle the topping evenly over the batter. Bake until a skewer inserted in the center comes out clean, about 45 minutes. Transfer to a wire rack to cool. Serve buckle warm.

  • Hi Dan and Lou, I’ve made buckle or crumble before and it seems my company enjoyed it more with vanilla ice cream on top. I like that Jake is expressing himself trying out different looks. The mustache looks good on him. When his son is born, he’ll be happy he has no beard because babies love to pull hair and beards. Lou, I hurt my shoulder a year ago and the only thing that helped was red light and ultrasound therapy treatments at my chiropractor. I had about 6 sessions and now my shoulder is pain free and full movement. When I was in grade school (catholic school) I thought I wanted to be a nun when I grew up. But as I got older I knew I wanted to do something to help people so either a doctor or a nurse. I’m now a retired nurse of 52 yrs, starting in pediatrics and then ICU and all different kinds of nursing over the years. I would’ve gone on to be a doctor or nurse practitioner but my former husband was not supportive and wanted me home cooking and cleaning. My beginning wage as a nurse back in 1971 was $4/hr and when I retired a few years ago it was $35-40/hr. Love your new carport by the way. You make it look so easy to build. Up here in west central Wisconsin we need fully enclosed and insulated garages due to temps that range from -50 degrees to +99 degrees. I see that you don’t have to get building permits etc to build what you need. That is nice.

    Lou, I have had a torn rotator cuff and it's no joke! It required surgery. I am praying for you! When I was little I always wanted to be a veterinarian. It never came about and I became an insurance agent, but now at the age of 57 I am on permanent disability and in a wheelchair. I have many health problems. Hugs and prayers to all of you on Morrow Hill! 💜🤗🇺🇲

  • Have a great 4th everyone! Lou, make sure you didn't tear your rotator cuff. When I fell off the back of a 4 wheeler, I couldn't lift my arm either. Had to have surgery. Hope you get better soon.

    Rotator cuff injury is not something to fool around with. Please get it checked out Lou. And Dan, it is extremely painful, so please stop playing with her arm. I guarantee if it had happened to you, you would not be joking about it. My husband had to have surgery to repair his and he said it was the worst pain he’s ever had. Hopefully, you didn’t tear it (if it is, you will need surgery), but you need to get it checked out.
