Classic Boba Tea Recipe (Homemade Bubble Tea 5 Ways)

Published 2024-03-08
Learn how to make bubble tea from scratch following our mix of black tea to get boba shop quality results at home.

Our recipe will make 1 cup (approx 250ml-300ml). But depending on how much ice and tapioca pearls you add, you might get some leftover drink base. Our favourite boba ratio to use is 200ml loose leaf base, 3tbsp milk, 3tbsp simple syrup, 4tbsp ice, 3 tbsp tapioca pearls.

🍴Simple syrup ingredients:
3 tbsp white sugar
3 tbsp water

🍴Tapioca pearls ingredients:
50g Tapioca starch
45ml Water
25g Brown sugar

📝 You’ll make 2-3 servings with these measurements. This is about 2-3 tbsp for each serving. For more details, see our video recipe:    • Tapioca Pearls (Boba) Recipe with Bro...

🍴Classic milk tea base ingredients using loose leaf:
200ml hot water (around 85-90 degrees, depending on the quality of loose leaf)
4g Assam, 1g Ceylon, 1g Oolong (alternatively use 3 black tea bags)

📝 Most recipes will tell you to use Assam (which isn’t wrong!) but to get close to the shops, you’ll need to use a strong brewed, blend of black loose leaf. Otherwise it’ll taste more similar to a sweetened British cuppa (at least to us).

The secret loose leaf mix we found to get close to our favourite shop is Assam, Ceylon and Oolong. Of course, every boba shop will have a different blend (and use varying quality of blends) so feel free to use these as a base to figure a ratio that works for you.

At the end of our video, we also show you how to make fruity bubble tea using mango or strawberry. We added in an earthy sweet drink using matcha powder and finally, how to use generic milk tea powders to make instant boba at home.

How should you store the uncooked boba pearls? I didn’t hear you talk about how to get different texture of tapioca pearls based on the different cooking time as you mentioned in the beginning of the video.

So the tea base is only used for one drink? It just surprises me that Most of these flavors dont even use actual tea in their recipes 🤔
