Monk takes too long. Battlemaster fighter is a better choice. Maybe a couple of levels of barbarian for unarmored defense, rage, and reckless attack. Fighter 1, Barbarian 1, Fighter 2-5, then Barb 2-3, then finish up Fighter 6-17. By going Fighter and Barbarian, focus on Str and Con, and Dex is tertiary. By going mostly Fighter, you also get more ASIs. Battlemaster manuevers replace open hand options. Plus riposte (counter attack) and parry and lunging attack. Plus trip, disarm, menacing, etc. It's a tighter build and you can't be Mike...Balrog with minimal strength.

I'm honestly surprised Balrog didn't get any feats in Barbarian considering his style of boxing is Slugger
