Ingredients:

For the Soup:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 large leeks (white and light green parts only), cleaned and sliced
- 4 medium potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt and pepper to taste
- Fresh chives or parsley, chopped, for garnish

For the Parmesan Croutons:
- 4 cups cubed bread
- 3 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste

Parmesan Croutons
- Preheat the oven to 360ยฐF (180ยฐC).

    My favorite soup, and the croutons are the crowning glory! My neighbor gave me so many leeks from his garden, I was carmelizing them and eating them with everything. They were so sweet and delicious!

    My favourite soup, I tend to make around 5 litres at a time and then freeze it in 350g portions. Blue cheese goes in too. Definitely giving those croutons a try.
