Hi everyone. Today’s cookbook is Betty Crockers Cooky Cookbook

Recipe is Pineapple Cookies

1 cup shortening
1 1/2 cups sugar
1 egg
1 can 8 3/4 onz of crushed pineapple with juice
3 1/2 cups flour
1 tsp soda
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup chopped nuts if desired

Mix shortening, sugar, and egg thoroughly. Stir in pineapple. Measure flour by dipping method or by sifting. Stir together flour, soda, salt, and nutmeg; blend in. Mix in nuts. Chill at least 1 hour.

Heat oven to 400. Drop rounded teaspoons of dough about 2 inches apart on lightly greased baking sheet. Bake 8-10 min; or until no imprint remains when lightly touched. Makes about 5 dozen cookies.

Pineapple Coconut Cookies
Omit nuts and add 1 cup flaked coconut

Pineapple Raisin Cookies
Add 1 cup of raisins

We baked on 350 on a silpat, silicone mat, for about 10 minutes. We used a fork to make a criss cross on the cookies before baking. We used a small cookies scoop about 1 tbs.

    Oh my gosh… my mom is 83 and still uses that cook book. One of many in a series of Betty Crocker in the 60’s.

    This was my moms favorite book. I have made many of these cookies, but not this one. When I tried them I loved them. Thanks for the changes they really helped.

    I do believe my mother had that one, as the picture is so familiar! I know that she made the Betty Crocker pinwheels and the ones that look like Candy Canes. I LOVE pineapple and pineapple cookies. GOOD CALL on the smaller cookies! I was worried about the big scoop, and the high temps. I think recipes often call for too-high temps.
