It doesn't necessarily mean you're saying you didn't do it, it just means that you're going to fight the charges. The other plea options are "guilty," which is you admitting you did it and you're automatically convicted; or "no contest" (or "no plea," as you guys use) which is you saying "I'm not saying I did it, I'm not saying I didn't do it, I'm just not going to fight it." No contest/no plea is the criminal equivalent of settling a lawsuit out of court - you're not admitting to anything, you're just doing whatever to settle things and get the case to go away.
