Hi friends, in this video I share my retro-style recipe for Morning Glory Muffin Quick Bread! This easy quick bread recipe channels some hearty, old-fashioned Morning Glory Muffins. This little loaf is chockful of vegetables, fruit, and nuts! The recipe can be compared to carrot cake, but it does not include shredded coconut as many carrot cake recipes do. Also, some Morning Glory Muffin recipes include a measure of orange juice in the batter, but I do not include that in my recipe... this time! I will include the o.j. if I have it on hand, and on this day I did not 🌞🍊 This batter can also be used to make 1 dozen (12) muffins, just fill the standard muffin pan cavities 2/3 full and bake for 20-25 minutes or until done. We love to make this Morning Glory Quick Bread ahead of time (usually on Sunday afternoons) for a delicious morning treat to start the week! This sweet, comforting quick bread is delicious on it's own, but a slice is made sensational with a good smear of salted butter or whipped cream cheese on top! Don't forget a fresh cup of coffee or tea to enjoy with your slice. ☕🍵🧈
