Easy 5-Ingredient Japanese Birthday Cake Recipe No Flour, No Butter, No Baking Powder

◆ Ingredients
・2 Eggs : 100g (3.5-ounce)
・Granulated sugar : 80g (2.8-ounce)
・Potato starch : 50g (1/3 cup)
・Heavy cream : 200ml (3/4 cup)
・10 Strawberries : 150g (5.3-ounce)

◆ Instructions
00:00 – Line a springform pan with parchment paper
00:29 – Separate the egg whites from the yolks
00:53 – Add sugar to the egg yolks and mix well
01:32 – Beat the egg whites to make meringue
02:05 – Fold a small amount of the meringue into the batter to lighten it
02:19 – Gently fold in the remaining meringue until the batter is light and fluffy
02:58 – Add the potato starch and mix well
03:36 – Pour the batter into the springform pan
04:04 – Bake for 20 minutes in an oven preheated to 180℃ (356°F)
04:28 – Cut the sponge cake after it has cooled slightly
05:05 – Add sugar to the heavy cream and whip until stiff peaks form
05:35 – Cut the strawberries
06:11 – Spread the cream on the sponge cake and place the strawberries on top
