The Perfect Crispy French Fries

I really hope you try these one day, so you get to experience the rare pleasure of truly amazing french fries, cooked fresh in your own home! The secret tips that make all the difference:

1. Serrated knife to cut the potatoes = rougher surface = crispier
2. Blanch in vinegar water = wash away surface sugar that causes fries to burn before turning crispy (awesome tip from the legendary Kenji Lopez-Alt "The Food Lab")
3. Double fry!

FREEZE after Fry 1 then do Fry #2 from frozen. Having a stash of frozen fries is SO GOOD!

    I have tried many different ways and this is the best hands down. Yes it takes some time but it's not a lot of actual work and after the first fry you can freeze them so just make a ton up front and you'll have fries for the next couple times.

  • Very nice techniques. A couple of tips and suggestions. 1) Just like in the restaurant frying oil can be recovered and re-used. Let the oil cool completely then poor though a mesh strainer into a container like a Qt size Mason Jar. Store in the fridge. Some particles will get though the mesh and settle at the bottom. Just discard the bottom centimeter of oil (with the particles) the next time you use it. Top off the jar with fresh oil to maintain the amount required for your pan. 2) If you really want to filter the oil then use a coffee filter in the mesh strainer BUT this will require the oil to be HOT and you will NOT be able to use a glass jar. Instead put your filter and strainer over another TEMP SAFE pan or container and then scoop ladles of oil in to the coffee filter. This will take additional time as it will take some time for the oil to pass though the filter. I find this step unnecessary and just use the strainer alone as in #1. 3) After the first fry at the point where the video says "Cool 30 mins" is the time when one can freeze the fries for later use. Just place them a single layer on a piece of parchment or wax paper over a cookie sheet and place them in the freezer for about 20 mins. Then you can dump them in a zip-lock style bag and they will not stick together. Frozen fries can be stored for weeks but if they are as good as these they will not last that long.

    This is a good method, I can back this. But give yourself a lot of time in the kitchen because the outcome isn't worth your time unless you're just making fries for dinner. I'd rather just deep fry Mccains frozen French fries.
