Making Pizza Dough in a Kitchen Aid mixer

Pizza Dough Recipe

2 cups Warm Water (110-115 degrees)
6 tsp Sugar
1 tsp Yeast
Mix together and let it sit for 10 minutes to allow the yeast to bloom.
Add 6 Tbsp Olive Oil
1 tsp Salt
6 cups of Bread Flour
Mix until it all comes together. Then, Mix for 6 minutes.
Cut into 3 equal portions and them in an oiled bowl, container or ziplock bag.
I put them in the fridge overnight and take them out a few hours before handling them. First, to let them come back to room temperature. Second, to allow for a second rise.
Put Crisco shortening on your pizza pan and spread your dough to the edges.
**At this point, I like to let my dough rise a little bit. I like a thicker crust.**
Bake at your ovens hottest setting 550°. Cook times vary on each stove.

You want the bottom to cook. I look at the bottom to know when they're done. Cook on the bottom rack, if the bottom doesn't want to cook. Cook on the top rack, if the bottom is cooking too quickly.

    Thank you Uncle Jimmy. I just bought one of these mixers, still waiting on delivery. Seeing the mixer handle six cups of flour was surprising. I plan on increasing my bread production significantly. I gotta admit, there is something about yeast that gives bread a flavor i like. I swear i would add a tablespoon of yeast for every two cups of flour. The six tablespoons of EVOO seems like a generous ratio. I feel a proper pizza crust should be infuse with olive oil. Isn't it interesting how traditional making of dough involves adding all the dry ingredients first, yet here in a mixer the order in which ingredients are added is done backwards
