  • On top of spaghetti all covered in cheese, I lost my poor meatball when I had to sneeze. It rolled off of the table and onto the floor and then my poor meatball rolled out of the door.
  • Those look yummy. I would suggest putting the enchilada sauce under the top tortilla. As soon as you pour a liquid over the tortilla, it's gonna start to get soggy. You may even want to try a thin layer of cheese on the bottom tortilla before adding the hamburger mixture to form a bit of a barrier between the saucy meat and the bottom tortilla. This won't affect the taste of the Mexican pizza, just keep the tortillas crispier.

    Yummy. Ty for sharing. I have to make some of these. I make quesadillas with flour or corn tortillas, no precooking, it just adds extra grease. Fold them in half as they cook. I mix a bit of salsa in the canned refried beans to make them spread easier, and I definitely use sour cream in all my Mexican dishes.

    Might try using Tostadas instead of frying tortillas. They are already fried and might not get soggy as much when baked in the oven.

    Use La Victoria Enchilada Sauce as the main shortcut...and I personally use the Rosarito jalapeno refried beans... Also use pepper jack cheese...
