Correction: the white enderman was not specifically supposed to be the farlander. The end dimension was first called in the games code the farlands and the enderman was supposed to be the farlander because they inhabitated the end

The cool part is that the white enderman actually makes a lot of sense as it is made up of the inverted colors of the enderman. i would guess that the stress on the server causes a minecraft visual error having inverted the colors. Just my guess tho

There is the fact that enderman was actually a long black skinny zombie back in the older versions which explains it burning in the video and in early stages of development, it had green eyes rather than those purples
