  • The tomato water or juice you drain off can be canned separately and used in soups, to cook rice or just to drink. We love it.

  • my mom blanched tomatoes to remove the skin - seemed to work great. Blanching tomatoes can help retain vitamins, particularly water-soluble vitamins like vitamin C and B vitamins, although heat/water tend to remove vitamin A and K
  • Love this family! Rebecca, you keep being you. Tomatoes are wonderful. I have been canning for about 45 years. Tomatoes is one of my favorite to can. Dehydrate those peels and then grind to use as a thickener when needed.

  • Take those skins, dehydrate them, blend them up....boom. put in soup, use them for sauce....use the entire tomato, get all the goodness from your hard work

  • Don't throw out the tomato skins. Dry the skins & use tomato powder in many dishes.
  • It’s good to see you out and about! ..I too have been canning tomatoes, salsa, Spaghetti sauce, potatoes, then freeze drying, squash, onions, potatoes, tomatoes, When I can the tomatoes, I use the skin and I just use an emulsion blender.. for stewed tomatoes,I just blanch them and peel the skin off, comes off easy then I jar them In A waterbath using 2 tablespoons of lemon juice in the bottom of the jar..I don’t roast them, too time consuming !! With onions I only jar a few I freeze dry the bulk!! My freeze dryer has been a Godsend! But I do use a dehydrator on onions as well because they turn out better
