Trying the VIRAL cottage cheese wrap!

Ingredients for wrap:
1 cup cottage cheese
2 eggs
seasonings (optional)

Directions:
Set oven to 360F

Combine cottage cheese and eggs in a blender. Bend until smooth. Spread thinly over a parchment lined backing sheet. Sprinkle with desired seasoning (optional) at this point.

Bake for 30-40 min or until lightly browned. The wrap should be firm to the touch and peel away easily from the parchment paper.

Let cool and use as a wrap!

To make into a pizza leave the wrap on the parchment paper. Spread on a thin layer of sauce and add toppings. Bake for an additional 10-15 min or until the cheese has melted.

    Next time, try flipping the pizza over after you bake it in the oven and then put the toppings on the brown side. This will give the other side, the soft white side time to brown when you put it back in the oven. Maybe then, when both sides are crusty, the texture will be firmer to hold like a real pizza. Something worth trying.

    Adding some mozz/parm cheese mixture (about half a cup) works wonders on this recipe (as well as college peptides, or beef gelletan). It gives it more structure, as well as flavor (cheese). For mine, I also put in a teaspoon of baking powder to floor it up. Also, borwning the top with your broiler is a good idea as well.

    flip it after the first bake and grease the parchment with butter ghee or lard should crisp it up

  • This looks like an improvement over my other cheese-crust pizza, which I finally gave up on (tasted too strongly of the colby-jack cheese it was made from, AND I could never get it thin enough). Blander cottage cheese would have to be better tasting. I'm gonna try this. But I think I will flip the crust over onto a second piece of parchment paper to brown both sides (split the time between the two bakes). It would likely get rid of yet more moisture - a good thing in a pizza crust.
