Crunchy Spiced Chickpea and Vegetable Medley
Ingredients:

2 cups cooked chickpeas (drained and patted dry if canned)
1 cup diced carrots
1 cup diced bell peppers (choose a mix of colors for visual appeal)
1/2 cup diced red onions
1/4 cup olive oil
1 tsp salt
1/2 tsp ground black pepper
1 tsp smoked paprika
1/2 tsp cumin
1/4 tsp chili powder (adjust to taste for heat)
1 tsp garlic powder
1 tsp onion powder
2 tbsp nutritional yeast (optional for a cheesy flavor)

Instructions:

Preheat Oven & Prep Vegetables:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. In a large bowl, combine the chickpeas, carrots, bell peppers, and red onions.

Season:
Drizzle the olive oil over the vegetables and chickpeas. Add the salt, black pepper, smoked paprika, cumin, chili powder, garlic powder, onion powder, and nutritional yeast if using. Toss everything together until well coated.

Bake:
Spread the mixture evenly on the prepared baking sheet. Bake for 25-30 minutes, or until the vegetables are tender and the chickpeas are slightly crispy. Stir halfway through baking to ensure even cooking.

Cool & Freeze-Dry:
Allow the mixture to cool completely at room temperature. Once cool, spread the mixture in a single layer on freeze dryer trays. Freeze-dry according to your machine's instructions, typically around 24 hours, until completely dry.

Store & Enjoy:
Once freeze-dried, store the Crunchy Spiced Chickpea and Vegetable Medley in an airtight container. Enjoy as a crunchy, flavorful snack anytime!

  • I know you won't be reading this. Yes, that show is Awesome. Their jokes are funny. Because their are like from the olden days of humer. Try to watch without trying to figure out when the funny parts are going to happen verbally and physically. They are smart they always ask questions . I got the complete series . I don't throw Money away with paying for shows & or movies on tv. I only have antenna channels. No I m not cheap. I just like watching movies on Dvds over and over again . My roommate hates it. He trying to convince me to go halfers with buying ( But I will never own the shows, Comedy and Movies on DISH if he can't pay for DISH. LOL. Because he thinks he can afford it. Then he wouldn't me asking to go halfers. LOL. I tell him I don't want DiSH in my bedroom you can put it in Living room and your bedroom ( being a smart a_ _ your Restroom.) Even in your 2 trucks, car and motor cycle. Have at it. He is retired. One check a month is like being on food stamps. very sad😢.

  • You should probably do a little more research on freeze drying. Candy should only take 2 hours and on your chickpea and veggies there was way too much oil. Oil should be extremely minimal to none because it causes freeze dried food to go rancid quickly

    I hope you didn't throw away those pepper tops...I hate to see food wasted and you seem to do it a lot. Unless you are cleaning them and saving off camera
